Three Bite Berry Pie

First Timer Tips: Only fill pie shells about halfway so that you don’t get overflow once the mix bubbles up.

Components:
1 c sugar
1/4 c flour
1/4 tsp sea salt
3 c frozen mixed berries
1/2 lemon, juiced
2 Tbsp unsalted butter
16 oz pie crust (homemade or store-bought)
1 egg, beaten
Preheat oven to 425°F.
Whisk dry ingredients together. Slowly add to mixed berries and toss gently to incorporate. Transfer mix to a saucepan and cook over medium high heat until fruit releases juice. Add butter and lemon juice. Stir and let cool.
Roll out first pie crust until 1/4 inch thin. Cut out 5-inch circles and place into muffin tin. Fill crust about halfway with cooled berry mixture.
Roll out second pie crust and cut into thin strips. Place strips on top of filling for a lattice effect (alternatively, you can just cut 2nd crust into 4-in circles and place on top of filling). Press lattice into edges of bottom crust and cut away excess.
Whisk together egg and 1 Tbsp water and brush on tops of pies. Place pies on baking sheet and cover loosely with foil. Bake for 15 min. Reduce heat to 350°F, remove foil, and bake until the crust is golden brown and filling is bubbling (~ additional 20 min). Remove from oven and let cool.
