Irish Soda Bread is beloved both for its comfort and ease. But what do you do when you want a little variety in your ISB? Make it brunchy, obvi! Spotted Dog is your run of the mill soda bread but with the addition of dried fruit, sugar, and eggs. It’s serving you rustic cottage. It’s serving you dense raisin toast realness. First Timer Tips: The original recipe suggests the bread is done after 45 minutes and typically you know bread is done when it gives a hollow sound when knocking on it. However I found that it needs ~5-10 minutes longer than suggested depending on your oven.

Dedicated Time: 60 min

Components:

3 2/3 c bread flour, plus extra for dusting**

1 tsp baking soda

1 tsp sea salt

1/4 c sugar

7 fl oz (scant cup) buttermilk

1 egg

2/3 c raisins

Preheat oven to 325°F.

Sift all dry ingredients into a mixing bowl. Mix buttermilk and egg together. Pour into dry mixture and mix until just combined. Add raisins and combine gently.

Turn dough out onto floured surface and shape into a round loaf. Place on a baking sheet lined with parchment paper and cut a cross into the top. Bake for 45 min.**
